Gyokuro is the highest quality and most expensive Japanese green tea. It is one of the rarest types of green tea produced in the world due to the hefty process of shading. Direct exposure to sunlight is blocked through methods of shading for 3 weeks before harvest. This process gives the tea its unique properties such as a rich flavor and a darker green color, thus producing the highest umami and sweetness levels in green tea. It also has a higher caffeine content, due to the nature of this process.
To get the most out of Gyokuro, the brewing method differs from other green teas by brewing at lower temperatures as it is more delicate. Traditionally Gyokuro is brewed at around a temperature of 60°C with 6-7 grams of tea for each 60 ml of water.
